Choco de Redondela: a mark of quality. Experts say that there are two factors that make it unique: the first is its habitat, the incomparable San Simón environment, and the second, the dedication of local fishermen and the traditional techniques they use to catch them. The choco (cuttlefish) usually live in sand and mud bottoms with marine vegetation, in areas close to the coast. Although they are fished throughout Galicia, apparently it is in this cove where the best conditions for their reproduction and development are found. In honor of this star gastronomic product, Redondela celebrates the Choco Festival every first fortnight of May. The tasting of the product is the main axis of the festival, both in its most traditional forms, with rice, in its ink and in empanada, as well as in other more innovative ones. During the season, many restaurants in Redondela offer this delicacy.
